CONTEXT

Marine algae are a major source of polysaccharides which are characterized by thickening and gelling properties, widely used in food and non food processing.
The ulvanes are extracted from the green algae (Chlorophytes) and especially from Ulva armoricana. It was described in the literature different extraction processes ulvanes from algae. However, the use of a polyose type ulvane, produced by the esterification of a polysaccharide, as surfactants has never been described before. These algae Ulva type are so far considered as nuisances, their proliferation resulting mainly from pollution.
