SPHENISCINS: PEPTIDES WITH ANTIMICROBIAL AND FOOD PRESERVING PROPERTIES

TECHNICAL DESCRIPTION

This invention describes the identification and the characterization of 2 peptides with antimicrobial activities isolated from the stomach content of the King Penguin (Aptenodytes patagonicus). These peptides, belonging to the ß-defensin family, are strongly suspected to contribute to the notable conservation of food stored in the male King Penguin stomach during the egg incubation period. In vitro tests revealed a marked antimicrobial activity against a broad range of Gram-negative and Gram-positive bacteria as well as fungus.
More generally, this invention refers to the characterization of these new peptides called spheniscins.
